Berry Lemon Scone

Ingredients

  • 3 ½ Cups flour

  • 2/3 Cups Sugar

  • 1 Tbsp. Baking Powder

  • 1 Tsp. Baking Soda

  • ¾ Tsp. Salt

  • 6 Tbsp. Cold Unsalted Butter cut in cubes

  • 1 Tbsp. Lemon Juice plus 1 cup milk

  • 1 Cup Blueberries

  • 1 Tsp. Grated Lemon Peel

  • 1 Egg

  • 1 Egg white

  • 2 Tbsp. Sugar

Directions

  • Combine flour, sugar, baking powder, baking soda, and salt in bowl.

  • Add butter mix with pastry blender till crumbly.

  • Stir in lemon milk to form dough along with blueberries, lemon peel, and egg.

  • With floured hands pat ½ dough into 7 inch circle on parchment paper.

  • Repeat with second ½.

  • Cut halfway down to make 6 wedges.

  • Brush with egg white sprinkle with sugar.

  • Bake 400º for 18 min.

  • Cool on wire rack.
