Berry Lemon Scone
Ingredients
3 ½ Cups flour
2/3 Cups Sugar
1 Tbsp. Baking Powder
1 Tsp. Baking Soda
¾ Tsp. Salt
6 Tbsp. Cold Unsalted Butter cut in cubes
1 Tbsp. Lemon Juice plus 1 cup milk
1 Cup Blueberries
1 Tsp. Grated Lemon Peel
1 Egg
1 Egg white
2 Tbsp. Sugar
Directions
Combine flour, sugar, baking powder, baking soda, and salt in bowl.
Add butter mix with pastry blender till crumbly.
Stir in lemon milk to form dough along with blueberries, lemon peel, and egg.
With floured hands pat ½ dough into 7 inch circle on parchment paper.
Repeat with second ½.
Cut halfway down to make 6 wedges.
Brush with egg white sprinkle with sugar.
Bake 400º for 18 min.
Cool on wire rack.
